Eggless Wholewheat Chocolate & Dates Cake

Who doesn't love cake? I love cakes and love to bake. But nowadays everyone is looking for healthier option, so if you are also in the same boat, then this cake recipe is perfect for your sweet cravings.

I have used here whole wheat flour and very less all purpose flour and instead of refined sugar I have used brown sugar. If you want you can make it completely with whole wheat flour and instead of brown sugar you can use jaggery or artificial sweetener. The cake is very soft, moist and the taste is awesome. The combination of chocolates and dates created a magic here with whole wheat flour.

So overall all the healthy ingredients are used to make this cake. Some people think that if they want to eat healthy, then they need to compromise with their taste buds. But I want to state that this is not necessary always, some foods are tasty as well as healthy and you can always enjoy them guilt free. This cake is the perfect example of this, a good option for weight watchers and diabetic people and one can enjoy it anytime specially with their evening cup of tea or coffee.



Ingredients

  • 1 Cup Milk
  • 8-10 Seedless dates
  • 1/2 Cup Brown Sugar
  • 4 Tbsp Melted butter
  • 1/4 Cup Plain yogurt
  • 1 Cup Whole wheat flour
  • 1/2 Cup All purpose flour
  • 1 tsp Baking powder
  • 1/4 tsp Baking soda
  • 2 Tbsp Cocoa powder
  • 1/2 tsp Vanilla Extract
  • Few seedless dates chopped


Directions

  1. Soak the seedless dates in 1 cup milk for at least half an hour.
  2. After half an hour transfer the milk and dates in a blender, add brown sugar to it and blend it to a smooth mixture.
  3. Now in a mixing bowl, take melted butter and add yogurt to it. Mix both the thing nicely.
  4. Next add all the dry ingredients in the bowl and mix it.
  5. Slowly add the milk and date mixture to it and make a smooth lumps free batter.
  6. Now add the vanilla extract and chopped dates to it and stir it well.
  7. Now grease a cake pan with little butter and flour and pour the batter on the pan.
  8. Bake the cake in a 350F preheated oven for 30 minutes.
  9. After 30 minutes remove the cake from the oven and insert a tooth pick, if it comes clean, it means the cake is ready.
  10. Enjoy this delicious healthy cake with your evening cup of tea or coffee.

                                                            Coconut Carrot Cake

                                                            I love to bake simple sponge cake and have it with my evening tea or coffee. But this time I thought to do some twist with my regular cake, so decided to make a carrot cake. While grating the carrot for the cake, one ingredient came to my mind and I decided to add that also in my cake along with carrots. I have some leftover shredded coconut in my refrigerator and I added that also in the cake and guess what? It turns to a perfect delicious Coconut Carrot Cake. My hubby love the cake so much that he finishes more than half of the cake.

                                                            So for what you are waiting? If you have all the ingredients at home then bake this delicious, moist and fluffy cake and enjoy it at any time of the day.



                                                            Ingredients

                                                            • 2 Cups All purpose flour
                                                            • 2 tsp Baking powder
                                                            • 1 1/2 Cups Powdered sugar
                                                            • 1 Cup Milk
                                                            • 2 Egg
                                                            • 1 tsp Vanilla Extract
                                                            • 2 Tbsp Melted butter
                                                            • 1 Cup Shredded carrot
                                                            • 1/2 Cup Freshly grated coconut


                                                            Directions

                                                            1. In a mixing bowl, add melted butter and eggs. Beat the mixture till the eggs get fluffy.
                                                            2. Now add milk and vanilla extract to it and mix well.
                                                            3. Now sift all the dry ingredients together to this mixture and blend it nicely so no lumps can form.
                                                            4. Blend it to a smooth mixture, if the mixture looks too dry then add little milk and blend it.
                                                            5. Now add the shredded carrot and coconut to it and mix nicely.
                                                            6. Meanwhile preheat the oven in 350 F. Pour the cake mixture in a butter greased cake pan and bake the cake for 30 minutes.
                                                            7. When the cake is done, bring it out from oven and let it cool down completely.
                                                            8. Unmould the cake from the pan, cut it and enjoy it.
                                                            9. Note:
                                                              If you want to put any icing then you can do it but I like to enjoy the cake as it is.

                                                                                                                      Eggless Banana-Almond Bread

                                                                                                                      Eggless Banana Almond bread is a perfect treat with your breakfast tea or evening coffee. Though the name is bread but it's basically a cake.
                                                                                                                      This combination of Banana and Almond gives a divine taste. Even though an eggless cake,  it is super soft, moist and melt in your mouth kind of food. It's a super delicious, addictive bread and looks completely yummy.



                                                                                                                      Ingredients

                                                                                                                      • 2 Pieces Ripe Bananas
                                                                                                                      • 1 tsp Vanilla Extract
                                                                                                                      • 4 Tbsp Butter (Melted)
                                                                                                                      • 3 Tbsp Yoghurt
                                                                                                                      • 2 Cups All-purpose flour
                                                                                                                      • 1 Cup Powdered sugar
                                                                                                                      • 2 tsp Baking powder
                                                                                                                      • 1/2 Cup Milk
                                                                                                                      • 1/2 Cup Almoonds chopped 



                                                                                                                      Directions

                                                                                                                      1. Take two ripe bananas and mashed it with the help of a masher and add one tsp of vanilla extract to it and mixed it well.
                                                                                                                      2. Now take melted butter and yoghurt to a bowl and whisk it till it gets a smooth texture.
                                                                                                                      3. Now add all purpose flour, sugar, baking powder and milk to it, blend it nicely to a smooth batter with the help of a hand blender.
                                                                                                                      4. Now add the mashed banana mixture and chopped almonds to it, mix it nicely one more time.
                                                                                                                      5. Now grease a loaf pan with little butter and flour, pour the batter to it and bake it in a 325F preheated oven for 45 minutes.
                                                                                                                      6. After 45 minutes bring out the cake from the oven and keep it in a cooling rack for cooling down and enjoy it.
